  • 240g plain flour
  • 1 1/2tsp baking powder
  • 1 teaspoon bicarbonate soda
  • 1/2 tsp cinnamon ground
  • 125g unsalted butter softened
  • 60g caster sugar
  • 40g honey, 2tbs
  • 2 eggs
  • 2 kiwi fruit peeled
  • 50g Milk

icing

  • 1 kiwi fruit peeled
  • 120g Butter
  • 1tsp vanilla
  • 100g icing sugar, approx 100g

pinch seasalt

Recipe's preparation

    cake
  1. put flour/bicarb/baking powder/cinnamon in bowl and mix 5 secs/ speed5 set aside

     

    add caster sugar and butter and whip for approx 30sec/speed5 stopping to scrape down

     

    add 2 peeled kiwis  mine were medium sized and honey mix 10-20secs/speed5 scrape down

     

    add eggs one at a time scrape down mix10- 20sec/speed 4

     

    add flour mix and milk and mix for few seconds speed 4 till combined

     

  2. put in to a 20cm tin i used fluted but i think would be better in springform tin cook at 190 for approx 45mins or till skewer comes out clean

  3. icing

    whip butter till creamy approx 30sec/speed5 scrape down once or twice

    add vanilla and peeled  kiwi and chop 10secs/speed5 scrape down add icing sugar  start with 100g and add till desired consistancy approx 30ssec speed 5 add pinch seasalt and mix again  5secs /speed5

Tip

i put a sliced kiwi on top,in original recipe it had no milk but i found mixture dry maybe my kiwi not ripe enough.

    Hoping this tastes as nice as it looks! Made it today for a Kiwi colleague’s birthday. Baked at 180c fan forced and then reduced to 160c for last 10mins. Used springform tin. Bit wider than 20cm. All seemed to work really well. Will update after we eat it!

    Made for the first time in new oven; instructions are great and cake worked out yum!  Cooked 40mins (last 10mins at 160 degrees); would consider lowering temp slightly next time.  I iced with just a plain butter icing...melted butter/icing sugar/hot water/vanilla essence.  lots of comments on the kiwi

    I just had to try this unusual recipe and I'm glad I did. Very tasty! I used 3 medium Kiwifruit instead of 2 and only baked for 40 mins. It came out more like a torte. I didn't love the icing as I couldn't get the consistency right even after emptying half a bag of icing sugar into it. Next time I might just dust the top with icing sugar instead. Thanks for sharing!
