Lara's Lovely Loaf

  • 80 grams Shredded coconut
  • 150 grams self-raising flour, You can substitute for Gluten Free
  • 150 grams sugar raw
  • 180 grams Milk, You can use Dairy, Almond or coconut Milk

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Grease a loaf pan. Preheat oven to 180C fan forced
  2. Place Coconut, flour, sugar and milk into mixing bowl. Mix for 20 secs at speed 4.
  3. Add flavours to mixing bowl ( you can omit the chocolate and substitute the raspberries for any fruit you have in your house ie tinned fruit, banana, frozen berries).
  4. Mix for 5 secs, speed 3.
  5. Pour mixture into greased loaf pan and place into oven. Cook at 180C for approx 45-60 mins.

THE GREAT THING ABOUT THIS RECIPE IS THE VERSITILITY. YOU CAN SUBSTITUTE THE FLAVOURS FOR WHAT EVER YOU HAVE IN YOUR PANTRY OR FRIDGE. Tinned pineapple or mashed banana are great.

    Jaynic: Im glad they loved it. Im sure if you wanted to leave the vegan chocolate out you could flavour it with your daughters favourite fruit instead. 😀

    This is delicious and so easy.
    I made it as per recipe but only put in 100g of sugar and was sweet enough.
    Has anyone tried this with mango? Could imagine it would be amazing with the coconut.

    This loaf was delicious. I had three builders here and they loved it too. I used chocolate chips, raspberries and 100g sugar. I'll make it again for my vegan daughter with almond milk and vegan chocolate. Thanks for the great recipe.
