LCHF GF Choc Hazelnut Brownie

  • 200 g Hazlenuts / Hazlenut meal
  • 200 g dark chocolate, I use Callibut 54.5%
  • 175 g Butter
  • 50 g cocoa
  • 6 Eggs (X-Lge)
  • 200 g stevia
  • 20 g Vanilla Paste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    1. Prepare Hazelnut Meal
  1. If using whole Hazelnuts, place in bowl and mill for 3 seconds Speed 10.

    Remove from Bowl and set aside.
  2. 2. Melt Chocolate
  3. Weigh Chocolate in bowl and mill for 3 seconds Speed 10, add butter in cubes, add cocoa.

    Set time to 5 min

    Set Temp to 70 degrees

    Set Speed to 2

    Once done, pour into a bowl and set aside to cool slightly.

    (I use my AlyceAlexandra spatula to squidgy all the good bits out tmrc_emoticons.)
  4. 3. Whisk Eggs
  5. Secure whisk in place

    Add eggs to bowl and bring up scales to add Stevia.

    Set timer to 1.30 min and Speed to 6
  6. 4. Combine Ingredients
  7. Set timer to 1 min Speed 2

    While motor is running, remove MC and pour in melted chocolate, add almond meal and then bring up scales to add Vanilla paste (or just a good squeeze of the tube)
  8. 5. Bake
  9. Divide batter into previously greased muffin moulds. I use my AlyceAlexandra spatual to drop a spoonful of batter into each hole.



    Bake for 18-20 minutes or until skewer / toothpick comes out clean

    Cool in pan for 5 minutes and then turn out onto rack.

    At step 3 when you whisk the eggs, is the aim to get them to a meringue like texture/fluffiness? I'm thinking if that's the case, it would be necessary to clean your bowl in between these steps?
