Lebanese Shortbread

Lebanese Shortbread

  • 175 grams unsalted butter
  • 175 grams Butter
  • 120 grams sugar
  • 160 grams almond meal
  • zest of one lemon
  • 1 teaspoon Vanilla bean paste or extract
  • 1 egg
  • 350 grams bakers flour

Recipe's preparation

  1.  

    Pre-heat oven 170-180 degrees

     

    Zest lemon – speed 9, 20 sec – scrape down speed 9, 10 sec (this is only necessary depending on how fine you like it) Set aside for use later

     

    Pre-mill almond meal – 20 sec, speed 9 Set aside for use later

     

    Cream butter and sugar – 45 sec, speed 5 add egg and vanilla mix 40 sec, speed 5

     

    Add flour, almond meal and lemon zest turning slowly from speed 1 to 5 until combined.

     

    Mixture will look like pastry, bit crumbly

     

    Place onto mat and mould into shape.

     

    Do not handle too much with hands (use TM spatula to work dough together).

     

    Roll dough until it is approx fingernail width thick and use the MC to cut out round shape.

     

    Place onto baking tray lined with baking paper and cook for approx 25min – 30min depending on how hot your oven is.

     

    Place shortbread onto wire rack to cool.

     

    Once cooled sprinkle with icing sugar or dip half into melted chocolate.

Tip

 

Tip: If kitchen is hot or a hot climate the butter will start to melt, you will need to rest in fridge before working with the dough or you may need to increase flour
