Lemon Coconut Slice

Ingredients

20 slice(s)

  • 120 g Desiccated Coconut
  • 120 g macadamias (raw)
  • 8 Medjool dates, seeds removed
  • 1 lemon
  • 2 tablespoons Coconut sugar
  • pinch salt

Recipe's preparation

  1.  

    Peel lemon to remove zest and blitz zest for 10 seconds at speed 9.

     

    Scrape down bowl and add all other ingredients, cutting lemon flesh from pith/peel.

     

    Blend well for 30 seconds on speed 8 while stirring with spatula.

     

    Press the mixture firmly into a square tin lined with baking paper.

     

    Place in the fridge to set.

     

    Cut into rectangles.
