Topping/Base

  • 155 grams Spelt Flour Wholemeal
  • 110 grams Oats,rolled
  • 1/2 tsp salt
  • 1/2 tsp Bi Carb Soda
  • 50 grams raw sugar
  • 40 grams Dark Brown Sugar
  • 170 grams unsalted butter
  • 1 tsp vanilla essence
  • 1 tsp cinnamon

Filling

  • 1 can sweetened condensed milk
  • 1 tbsp finely grated lemon zest
  • 150 grams lemon juice(fresh)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Instructions
  1. 1 Preheat oven 160 Celcius FF

    2 Grease and line a slice tray 17x28 cm with baking paper

    3 Weigh and place in TMX Bowl all dry ingredients for Topping/Base

    4 Mix on Speed 4 for 6 seconds

    5 Add butter, vanilla essence and cinnamon, Speed 4, 50 degrees for 40 seconds till well combined and preferrably crumbly. Divide in two parts.

    6 Put half of the mixture on the tray and press into an even layer. Bake in preheated oven for 10-15 minutes. Then remove from oven and allow to cool, leave oven on.

    7 Rinse the bowl, add all Filling ingredients and blend for 30 seconds on speed 3

    8 Pour filling over base and spread to edges, sprinkle remainder of reserve crumble on top.

    9 Bake in oven for about 20 minutes till golden brown.

    10 Allow to cool and place in fridge before cutting into squares.

    11 Enjoy with your coffee or with custard and icecream for dessert

Tip

Best cut after its cooled down in a fridge.

Can be served hot or cold.

Can vary the amount of lemon juice to taste 80ml-160ml.

Use whatever flour you have on hand.
