Lemon Curd Slice (Gluten-Free)

  • 300 g Gluten-Free SR Flour
  • 120 g Butter
  • 150 g sugar
  • 3 eggs

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Method:-
  1. 1.
    Preheat oven at 180°C. Grease and line a swiss roll tin.
    2.
    The Dough:-
    Place all dough ingredients into TM bowl. Mix 30 sec/speed 5
    Remove dough from the TM bowl and divide in half
    3.
    Place one half in cling wrap and press down flat
    Place it in the freezer for later
    4.
    Place 2nd half of the dough into the prepared swiss roll tin. flatten a littlle. Then spray a piece of cling wrap with spray oil, and place this on top of the dough. You can now flatten evenly the dough to reach the edges of the tin. Peel off the cling wrap.
    (This may look like a very thin base, but that's how it's meant to be)
    Bake 10 minutes in the preheated oven.
    While this is baking, you can now work on the curd.
    5.
    Now the Lemon Curd:-
    Into a clean TM bowl, place all the Curd ingredients
    Cook 5 min/100°C/speed 4
    6.
    Pour the Curd over the base in the prepared tin
    7.
    Now take the 2nd half of dough out of the freezer, and quickly cut the dough into small 1-2cm cubes (this may still be a bit gooey, but the cubes don't have to be too great!)
    8.
    Place these cubes evenly on top of the curd
    9.
    Bake in preheated oven for 25 minutes
    10.
    Cool completely, then cut and enjoy!!

Optional:-
Dust with Gluten-Free Icing Sugar before serving

    eggplant:The curd can be either hot or cold, but I find that is isn't hard to make it quickly in the Thermomix, and so opt for this. (The way it is in the recipe above, is to use it hot) Baking may be slightly longer if its cold, so just give it a few more minutes if it needs it. I know you will love this recipe, and enjoy making this in your Thermomix!

    jennybart: I made this recipe again to take to work to share with my colleagues and received lots of comment about how lovely it was. My son who said he does really like sweet things asked for another slice and another. I believe it's a winner in my home too.
