Ingredients

The Dough:-

  • 300 g Gluten-Free SR Flour
  • 120 g Butter
  • 150 g sugar
  • 3 eggs

The Lemon Curd:-

  • 120 g lemon juice
  • 120 g Butter
  • 150 g sugar
  • 2 eggs

Recipe's preparation

    Method:-
  1. 1.
    Preheat oven at 180°C. Grease and line a swiss roll tin.
    2.
    The Dough:-
    Place all dough ingredients into TM bowl. Mix 30 sec/speed 5
    Remove dough from the TM bowl and divide in half
    3.
    Place one half in cling wrap and press down flat
    Place it in the freezer for later
    4.
    Place 2nd half of the dough into the prepared swiss roll tin. flatten a littlle. Then spray a piece of cling wrap with spray oil, and place this on top of the dough. You can now flatten evenly the dough to reach the edges of the tin. Peel off the cling wrap.
    (This may look like a very thin base, but that's how it's meant to be)
    Bake 10 minutes in the preheated oven.
    While this is baking, you can now work on the curd.
    5.
    Now the Lemon Curd:-
    Into a clean TM bowl, place all the Curd ingredients
    Cook 5 min/100°C/speed 4
    6.
    Pour the Curd over the base in the prepared tin
    7.
    Now take the 2nd half of dough out of the freezer, and quickly cut the dough into small 1-2cm cubes (this may still be a bit gooey, but the cubes don't have to be too great!)
    8.
    Place these cubes evenly on top of the curd
    9.
    Bake in oven for a further 25 minutes
    10.
    Cool completely, then cut and enjoy!!

Optional:-
Dust with Gluten-Free Icing Sugar before serving

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
