Lemon drizzle cake

Ingredients

12 piece(s)

  • 1 lemon, Rind only. Keep remainder for topping.
  • 150 grams caster sugar
  • 185 grams Butter
  • 3 eggs
  • 240 grams plain four
  • 3 teaspoons baking powder

Lemon topping

  • 1/2 Cup, regular sugar
  • 1/4 Cup, lemon juice

Recipe's preparation

    To prepare the dough:
  1. 1. Preheat oven to 180c.

    2. Grease and line a 30cm x 21cm slice tray.

    3. Put lemon rind and caster sugar into theClosed lid.

    4. Blend 20 secs, speed 9. Scrape bowl.

    5. Add chopped butter. Blend 20 secs, sp 4. Scrape down Closed lid.

    6. Add all the remaining dough ingredients.

    7. Blend 30 seconds, sp.5.

    8. Spoon mixture into prepared tray. Smooth top.

    Bake for around 25-30 minutes, or until golden and cooked when tested.

    Remove from oven but leave in the tray.
  2. Lemon topping
  3. Immediately after removing the tray from the oven, quickly stir together the sugar and lemon juice. You want the sugar granules visible and not dissolved.

    Spoon this mixture evenly over the top of the cake.

    The lemon juice will sink into the cake and the sugar creates a crust on top.

    Leave to cool in the tin, so that the juice can be further absorbed into the cake.

Tip

This is our favourite cake.

I can't quite remember where the recipe comes from. I know my late mother made it a lot. I found it in amongst her hand written recipes. I converted it into Thermie speak. tmrc_emoticons.;)

 It keeps well and freezes well.

    Made this today and was lucky I didn't eat it all! So yummy! Light and lemony and sugary...what more could you ask for? 

    The batter is very thick and was a bit of a bugger to get out of the thermie, but it was definitely worth it in the end. This will be a regular for the lunch boxes!

    Easy to make. Reduced sugar (in cake) to 100g. I like the sugar mixed into the lemon juice for the topping so I use caster sugar. Prick cake all over with fork to make sure syrup sinks into cake.

    I have reducedthe sugar (100gr only) for the cake and used raw sugar.

    Very easy recipe and totally reccomend it.

    Will do it again, thanks for sharing this beauty.

    It turned out fantastic.

    Made a huge cake and nice and moist.

    I did change the topping method though

    1. Immediately after removing from oven, spread the sugar over top, the using a pastry brush dab the lemon juice over.

    Do this whilst the cake is still hot. Just found it was easier this way.
