Lemon Friands

  • 190 grams Butter
  • 60 grams plain flour
  • 200 grams icing sugar, plus extra to dust
  • 120 grams almond meal, Or Whole Almonds just mill prior
  • 5 egg whites
  • zest of 1 lemon

Recipe's preparation

  1. Preheat oven to 180 degrees.

    (Mill Almonds if using whole Almonds 10 seconds speed 4 and set aside)

    Melt butter in  1 minute speed 4, set aside.

    Place flour, icing sugar and milled almonds into  and mix 10 seconds speed 4 and set aside.

    Pcace egg whites into  and beat for 15 seconds speed 2. Add all dry ingredients including melted butter to egg whites and combine 20 seconds speed 2 unti completely combined.

    Fill ech tray 2/3 full. Bake 25-30 minutes until golden brown and a skewer inserted in the centre and comes out clean.

    Remove fom oven and leave in the trays for 5 minutes, then turn out onto a wire rack to cool down compleatly.

    Dust with icing sugar and serve.

    Delicious! Nutty and lemony. Added a splash of lemon juice as well. I got 7 large friands out of the mixture.
