Lemon Meringue Fudge

  • 180 grams white chocolate melts
  • 395 grams condensed milk
  • 160 grams sugar
  • 120 grams Butter
  • 30-50 grams glucose syrup
  • 2 1/2 - 3 teaspoons Lemon flavouring extract (Queens)
  • 1 cup of meringue
  • 1/8 - 1/4 teaspoon yellow food colouring

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. MILL White chocolate melts at speed 9 for 10 seconds MC ON. Set aside.
  2. ADD condensed milk, butter, sugar, lemon extract and glucose syrup to bowl. Cook at 100 degrees speed 3 for 8 minutes. MC OFF
  3. ADD yellow food colouring and COOK for a further 20 minutes on Varoma temperature speed 3. MC OFF
  4. ADD milled chocolate and meringue pieces. MIX on reverse speed 3 for 10 seconds until chocolate and meringue pieces are combined.
  5. POUR into lined square cake tin 20cmx20cm (approx).
  6. LET COOL for an hour or two on the bench.
  7. REMOVE from tin and slice into squares and place in container.
  8. STORE in the fridge.

Tip

When I cut the meringues I use the leftover crumbs to decorate the top of the fudge.

I used the generic brand of little meringues from Woolworths or Coles, a cost of approx. $4.20 a box.

I used approximately 16 meringues (1/3 of the box).

    melgourlay: Lemon exact is the same as lemon essence so use the same amount. If you were using an oil then you would reduce to 1 teaspoon.

    This is a great recipe which turns out perfectly every time. I also adapt it by leaving out the lemon flavouring/meringue pieces and adding in pistachios and cranberries at the end. Everyone loves it and it is really popular at Christmas. You can adapt it further by substituting milk or dark chocolate melts instead of the white chocolate. I have made both these versions and they are scrumptious.

    Gourmet chef: I have never had that problem, did you have the mc off during all cooking times? I have seen on a Thermomix group that people have been having problems with a caramel fudge so they have cut it up and put it back in the thermomix and cooked for longer or added more chocolate. Maybe you can roll it in coconut and make fudge balls if you don't want to add it back to the thermomix.

    I did try to do a choc orange using the zest thinking it would give it a bit more flavour but found that I was biting into the zest through the smooth texture of the fudge and it wasn't a nice sensation. Maybe if you could dehydrate the lemon peel and then turn it to powder or maybe a lemon oil flavouring would be stronger (the oils can be purchased through Baking Pleasures online and they have lots and lots of greats flavourings that I have bought and still have yet to try.

    The sprinkling on the top is actually the meringue that was left on the chopping board when I cut down the meringues into little pieces, I tipped it into the lined tin before the fudge was added then I use the bottom as the top of the fudge.

    I made this today, it was delicious. I saw what happened regarding the drama and I just want to say thank you for taking the time to post this, everyone gets inspiration from somewhere and everyone creates their own spin on a recipe. the lynch mob  that sometimes happens without hearing every side of the story is horrible and stressful and Unnecessary. I will also try keiras and am keen to see how it goes because I really do love my lemon! Please don't let this put you off further creations.
