Ingredients
Lemon Poppyseed Swirls
- 125 g Butter
- 110 g caster sugar
- 1 tsp vanilla extract, I used vanilla paste
- 1 egg
- 250 g plain flour, I used gluten free
- 1 tsp baking powder
- 1 tbsp Milk
- 1/2 Lemon Butter, 1/2 cup. I used the cookidoo recipe
- 2 tbsp poppy seed, I didn't measure these just sprinkled generously

- Add butter, sugar and vanilla to bowl. Mix for 20 seconds on speed 4.
- Scrape down sides of bowl.
- Add egg. Mix for 10 seconds on speed 4.
- Add flour and baking powder. Mix for 15 seconds on speed 5.
- Add milk. Mix for 10 seconds on speed 4 or until just combined.
- Turn dough on bench and gently bring together in a ball. Divide into 2 equal portions and wrap in baking paper. Chill dough balls for 1 hour.
- Place one portion of dough between 2 sheets of baking paper. Roll into a rectangle approximately 20x30cm. Repeat with the second portion
- Spread 1/4 cup lemon butter over each rectangle. Sprinkle evenly with poppyseeds.
- Roll up tightly from the long side (like a swiss roll). Wrap in baking paper or cling wrap.
- Freeze for 1 hour or until sliceable.
- Slice logs into 1.5cm rounds.
- Preheat oven to 180c or 160c fan forced.
- Line 2 trays with baking paper. Place biscuits on trays and bake for 15-18 minutes or until light golden. Swapping trays halfway. Cool for 5 minutes on trays and then transfer to a rack.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
