Lemon Scented Coconut Almond Macaroons

Ingredients

30 portion(s)

Macaroon dough

  • 150 g Shredded coconut
  • 100 g Raw almonds, skin on
  • 100 g raw sugar
  • 1 lemon, zest only
  • 2 egg whites

Recipe's preparation

  1. Preheat oven to 170C (fan forced).


    Line two baking trays with baking paper.


    Place zest, almonds, coconut and sugar into TM bowl.


    Mill on speed 9 for 15 – 20 seconds or until fine


    Add two egg whites and mix for 10 seconds on speed 4.


     


    With wet hands, roll mixture into walnut sized balls and place on lined tray.


    Flatten slightly with a wet fork.


     


    Bake for 10 – 12 minutes or until light golden on the edges


     


    Makes approximately 30

Tip

Sugar quantity can be halved to 50g for a less sweet result.

    Great recipe......Ive been doing Easter cooking this morning and had 2 egg whites left over from chocolate fondants.  I hate waste so made these.  My walnut size a bit big I think I ended up only making 17 rather than your suggested 30.  Will make smaller next time.  Thanks so much for sharing  tmrc_emoticons.)

    Yummo!I decided to halve the recipe so there wouldn't be so many sitting around and tempting me lol.I used 5 dates instead of the raw sugar, and added them in at the milling stage.Also, after that I forgot I was halving the recipe and used the 2 egg whites and 1 full lemon zest, so they are probably a bit softer than yours but they still taste great!
