Low Carb Banana Bread

  • 100 g coconut oil
  • 100 g bananas, approx 2 small bananas
  • 3 eggs, at room temp
  • 1 tsp vanilla extract

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 170 degrees celcius and line a loaf tin with baking paper. Set aside.
  2. Weight 100g coconut oil into mixing bowl. Secure lid and melt 60sec/50 degrees/speed 1.
  3. Pour melted oil into seperate bowl and set aside to cool.
  4. Place roughly 100g of bananas into mixing bowl. Add in 3 eggs at room temperature. Add 1tsp of vanilla extract.
  5. Secure lid and blend 10 sec/speed 8
  6. Add to mixing bowl 60g almond meal, 40g coconut flour, 50g stevia, 1.5tsp baking powder, 1tsp cinnamon, and 0.25tsp salt.
  7. Add melted coconut oil to mixing bowl. Secure lid and mix 10 sec/ speed 5.
  8. Scrape down sides of mixing bowl, secure lid and mix 5 sec/ speed 5.
  9. Pour mixture into prepared loaf tin and bake on 170 degrees C, for 35-40 minutes until cooked through.
  10. Allow to cool for 10 mins in tin before transferring onto wire rack to cool completely.
  11. Slice into 10 pieces to serve immediately or store in an airtight container for up to 4 days.
