Ingredients

  • 80 g quinoa
  • 200 g oats
  • 80 gmixed seeds (try linseed, sesame, sunflower and Pumpkin seeds)
  • 100 g dessicated coconut
  • 150 any dried fruit
  • 200 g unsalted butter, (Everyday Cookbook, page 12)
  • 100 g honey

Recipe's preparation


    • Mill
      the quinoa for  30 seconds on speed 10.

    • Add
      coconut, oats and seeds and dry toast for 5 minutes at 100C on speed 1.
      Set mixture aside.

    • Place
      the fruit in a clean TM bowl. Chop for 5 seconds on speed 5. Set
      aside.

    • Melt
      butter and honey for  8 minutes at
      100C on speed 1
      .

    • Combine
      all the other ingredients to the wet mixture and mix on  Counter-clockwise operation at speed 4. Until all
      ingredients are well mixed.

    • Working
      quickly, press the mixture into a 28cm slice tray (greased). 
    • Score into 24
      pieces with the spatula and place in the fridge to cool.

  • I made a gluten free version

    I made a gluten free version using puffed amaranth instead of the oats and it was delicious.  I had to add them a bit at a time until I got the right consistency, but I forgot to weigh them.  Will do next time.  Great idea for school treats.

    Great healthy bar.  I used coconut oil instead of butter and used 50g honey and 50g rice malt syrup.  Also added in some chia seeds and puffed rice.  Can't wait to try it, cooling down in the fridge!
