Biscuits

  • 250 g Butter, Must be room temperature
  • 1 tsp Vanilla Bean Paste
  • 60 g icing sugar, Can premill in TMX
  • 250 g plain flour
  • 80 g cornflour

Biscuit Filling

  • 125 g Butter, Must be room temperature
  • 90 g icing sugar, Can be premilled in TMX
  • 95 g custard powder
  • 1 tsp Vanilla Bean Paste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Biscuits
  1. Preheat oven to 160° (fan forced)

    Step 1 – Place butter into TMX bowl, mix for 1 minute on speed 2

    Step 2 – Add icing sugar and vanilla bean paste, cream for 15 seconds on speed 3. Scrape down bowl and repeat step 2

    Step 3 – Add plain flour and cornflour, mix for 15 seconds on speed 3

    Step 4 – Scrape down bowl and repeat step 3

    Step 5 – Roll mixture into approximately 1 cm round even balls, place on baking tray and press down lightly with a fork

    Step 6 – Bake for 10-15 minutes or until golden brown
  2. Biscuit Filling
  3. Step 7 – Add all ingredients to the TMX bowl, mix for 10 seconds on speed 5. Scrape down bowl and repeat if needed.

    Step 8 – When biscuits are cool place biscuits into pairs and spread or pipe one half of the biscuit with filling and sandwich together

    Step 9 – Allow filling to set and they are ready to serve

Tip

Unless your TMX milled flour is very fine i would advise to use shop brought flour as the biscuits hold together much better.
