- peeled rind of 1 lemon
- 125 grams Butter
- 150 grams caster sugar
- 3 organic, free-range eggs
- 180 grams whole milk
- 200 grams Self Raising Flour
- 50 grams freshly squeezed lemon juice
- 50 grams caster sugar
Wash then peel the rind of 1 lemon, being careful to evoid the white pith as this can be very bitter. Put rind into mixing bowl and chop speed 7, 10 seconds. Scrape down sides of bowl and repeat.
Add chopped butter and 150g sugar and melt at 90 degrees, speed 1, 4 minutes. Do not boil.
Add milk, add eggs and flour. Mix on speed 4 for 10 seconds. scrape down sides of bowl and repeat.
Pour batter into well-greased lof tin and cook for 40 minutes in moderate oven or until inserted skewer is removed cleanly.
When cooked, remove from oven and leave to cool in loaf tin.
Plce extra sugar and joice of the lemon into mixing bowl. Hear at 100 degrees for 3 minutes, speed 2.
Drizzle slowly over hot cake so that it soaks into the top rather than pooling around the edges.
Remove cake from tin once cooled.
