Dough

  • 230 g Butter, roughly chopped
  • 130g white sugar
  • 160g brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 400g plain flour
  • 1 tsp bicarb soda
  • 1 tsp salt
  • 200g M&Ms

Recipe's preparation

    Recipe Preparation
  1. Preheat oven to 190 degrees (180 degrees fan forced).

     

  2. Line three baking sheets with baking paper.

     

  3. Place butter into mixing bowl and melt 30 sec/90C/speed 1.

     

  4. Add the sugars and vanilla extract and mix 1 min/speed 4.

     

  5. With blades rotating at speed 4, add eggs one at a time through hole in mixing bowl lid.

     

  6. Add the flour, bicarb soda and salt and mix 1 min/speed 4.

     

  7. Add the M&Ms and mix 30 sec/Counter-clockwise operation/speed 4.

     

  8. Drop tablespoonfuls of dough onto the prepared trays, leaving a couple of centimetres between each one to allow for spreading. You may find it easier to transfer the cookie dough to a bowl so the blades aren't in the way.

     

  9. Bake for 9-11 minutes. Cool on trays. Cookies will be soft when removed from the oven but will harden as they cool.

    These are pretty good - the kids gave them a big thumbs up and said they were just like Subway cookies.  They were a little sweet for my taste, and I think I'll try cutting down the sugar next time.Perhaps my butter was a little cold, as melting it actually took 2 minutes, not 30 seconds! And even in reverse, at speed 4 some of the M&Ms didn't make it, leaving little chocolatey swirls behind due to the residual heat of the mixture. I might bix them through on a slower speed next time.I found that the mixture was a little harder to work with than I expected, especially as it cooled, and my biscuits came out looking a little rustic. tmrc_emoticons.) I think because of that, mine were larger than they should be, as I only got 22 bickies out of mine.
