Moist Date Loaf
- 3/4 --- Cup pitted chopped dates, Medool
- 3/4 --- Cup of water
- 1 teaspoon Bi-carb soda
- 60 grams Butter
- 1/2 --- Cup of Caster sugar
- 1 --- egg, Lightly beaten
- 1/2 teaspoon vanilla essence
- 130 grams Self Raising Flour, Wholemeal or White

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat oven to 170° (fanforced)
Place water and dates in bowl 2min/100deg/"Gentle stir setting"
Transfer to another bowl, whilst hot stir in Bi-carb and set aside.
Add butterfly and cream butter and sugar, 1min/sp3 Scrape sides of bowl then add egg and vanilla essence, 30sec/sp 2.5
Remove butterfly and scrape sides of bowl.
Add flour and dates "Dough mode" 15 sec. Scrap sides, "Dough mode" another 15 sec
Pour into greased or lined loaf tin and bake at 170° for 30mins

Tip
You can also make these into muffins and reduce cooking time to approx 15mins
Or a 20cm round cake tin, cooking time will vary also.
