Mrs Woo's Banana Cake Easier Method (no change in ingredients)
- 125 g Butter, cubed
- 125 g raw sugar
- 2 --- Eggs, room temperature
- 3 Bananas, large, ripe
- 2 tbsp Milk
- 1 tbsp lime juice
- 230 g plain flour
- 1 tsp baking powder
- 1 tsp Bi-carb soda
- 2 tsp mixed spice
- 250 grams cream cheese, room temp, cut into 4cm squares
- half lemon, juice only
- 100 grams icing sugar, (or raw sugar)

Recipe's preparation
- Preheat oven to 180C.
Cream butter and sugar on speed 3 for 20 seconds.
Continue on speed 3 as you add eggs one at a time through the lid (approx. 20 – 30 seconds).
Add pieces of banana, milk and lime juice then mix on speed 3 for 10 seconds.
Add dry ingredients and mix for 15 – 20 seconds on speed 6 using spatula to help incorporate.
Put mix in a loaf tin or ring tin. Bake for 40 minutes (may need up to 10 minutes extra).
Cream Cheese Icing
[size= 13px]Meanwhile, rinse out TM bowl and put all ingredients into TM bowl for icing. Mix [/size][size= 13px]5secs/ speed5[/size][size= 13px]. Note, if using raw sugar, mill first [/size][size= 13px]20secs/ speed 10[/size][size= 13px] and then add in remaining ingredients.[/size]

Tip
* Substitute cinnamon for mixed spice and add the grated rind of an orange.
* Use buttermilk in place of milk.
* Add choc chips, grated orange rind and chopped dates for Ambrosia Cake

I have made this cake many times using the original recipe. Eventually I decided to incorporate all method steps into the Thermomix. So far this variation has been working well. I look forward to hearing other comments. Cheers!
