Ingredients

50 slice(s)

Wet ingredients

  • 100 grams Butter
  • 200 grams sugar
  • 160 grams honey

Dry Ingredients

  • 110 grams rolled oats
  • 150 grams Self Raising Flour

Fruit & nuts

  • 160 grams dried fruit of choice
  • 400 grams Nuts and seeds of choice

Recipe's preparation

    Preparation
  1. Pre heat oven 180 C

    Baking tray 33cm * 24 cm line with grease proof paper

  2. Melt
  3. 1. Mill sugar @ speed 9 * 10 seconds

    2. Add honey and butter and melt temp 60 C for 2 minutes till sugar dissolved (be careful not to over cook as becomes thick and difficult to incorporate other ingredients).

  4. Dry ingredients
  5. 1. Add dry indredients to Closed lid and mix Counter-clockwise operation speed 3 using spatula

  6. Fruit and nuts
  7. 1. Empty mixture onto thermomat and add fruit and nuts. Using wet hands mix all ingredients.

    2. Place ingredients into baking tray and spread out evenly using wet hands.

  8. Baking
  9. 1. Bake for 15 mins

    2. Should be slightly brown - try not to over cook as  nicer soft and gooey.

    3. Remove from tray and cut into 50 to 60 slices.

    4. Can be frozen (if any left, seriously addictive).

    Loved this But made changes based on what I had available,

    I used 50g sugar and milled 150g nut mix. 

    I added 160g rice malt syrup instead of honey. 

    I dissolved a little longer (2.5 mims) but didn't go tough...mainly cause I wasn't sure about the sugar...mixed with nut

    i used 80% nut/fruit and 20% seeds of the total fruit/nut weight 

    Annd I cooked for 25 mins...LOVE the crunch.  Now im eating them hot which is an issue cause they're for family lunches!! 

    i I can't imagine more sugar, I think it'll be much too sweet.

    Have made these twice now

    I put the nuts etc in at the end, into the TM and mixed them up - as suggested above. (INCREDIBLY SWEET KIDS DEMOLISHED THEM)

    Second time I made it I only put 50grams of sugar and much more - Kids still demolished them.

    Lovely recipe - however I would suggest pulsing nuts after sugar for finer consistency.  Cutting with full nuts was tricky and end result was misformed bars.  Had one for breakfast and yum ! Would like to give as gifts but appearance needs improvement  tmrc_emoticons.D
