Nan's Coconut Rough Cake

  • 120 grams Butter, softened
  • 120 grams caster sugar
  • 2 eggs
  • 30 grams Desiccated Coconut
  • 35 grams cocoa powder
  • 120 grams Self Raising Flour
  • 50 grams Milk

Recipe's preparation

  1. Cream butter and sugar for 10 seconds on sp 4.


     


    Scrape down sides and cream for a further 10 seconds on sp 4.


     


    Add eggs, 1 at a time, while running at speed 4 - this should take 30 seconds. Scrape down sides.


     


    Add all other ingredients, mix on speed 4 for 10-15 seconds, or until combined.


     


    Pour into cake tin - I used 20cm square. (Don't forget to turbo to clean the last of the batter off the blades.)


     


    Bake at 160 for 25 mins.

    This cake is beautiful! Not a very big cake but it is amazing! I made it for my sister in laws birthday cake and then made a second batch into cupcakes. The kids LOVE the cupcakes!! Thankyou so much!
