No Waste muffins 30 Second Whole Orange Cake

Ingredients

12 portion(s)

Cake batter

  • 1 whole orange cut into quarters
  • 250 grams butter (whole block), (original recipe uses 225g of butter but I can't bare to have a small knob left over in the fridge so use it all)
  • 3 eggs
  • 200g sugar
  • 330g Self Raising Flour, (original recipe uses 300g but I added extra to compensate for extra butter)

Recipe's preparation

    No Waste Muffins | 30 Second Orange Cake
  1. Preheat oven to 180C. Add muffins papers to a muffin tray. (makes 12 large muffins). Original recipe uses a 20cm cake tin - our family manages the portions better as muffins.

    2.  Place orange and butter into mixing bowl and mix 7 sec/speed 8. My family likes a smoother orange cake (less chunks) so I scrape down the bowl sides and mix for another 15 sec/speed 8.

    3.  Add remaining ingredients and combine 20 sec/Counter-clockwise operation/speed 4.  (Option: I chose to mix it longer in regular direction for 30 secs/speed 8 (or more if you prefer) to give a lighter consistency. You can push the spatula into the lid to assist the mixing process if necessary).

    4.  Spoon large dollops into muffin cases and bake for 35-40 minutes or until skewer comes out clean.  Feel free to lick the bowl!

Tip

I changed this recipe because I don't like small ingredient leftovers (ie 225g butter vs 250g block of butter) and our family manages muffin portions better than a whole cake.

    Fantastic cake!!
    I first made this cake for my sister to take to her work.
    Now she gets so many requests as it's the office favourite. I've always made it as a cake now turning into muffins is even better. I made 6 large muffins with 4 small muffins with the left overs. Next time I'll use the smaller muffin tray as the large muffins are almost the size of a cake.
    I didn't change a thing about this receipt as it's perfect the way it is and everyone loves it.

    I made two batches of this today, one into muffin size and one into a nice large round cake. Very moist, tasty and sooooo easy! A hit with the family! I followed recipe accordingly, just added the juice of another whole orange extra, so make a bit more moist.

Like some others I only added 170g of sugar and a tablespoon of poppy seeds and made 12 muffins.They are the lightest,fluffiest muffins I've EVER made and my boys loved them,such a huge hit!!     Used 2 small oranges, and going by the note in original recipe, only 1/2 the sugar. Was a mistake, needed more than 100g sugar. Was a very dense cake. Probably won't make it again.

    Awesome! An idea for an extra health boost. Love it! I wonder if the texture would be ok to chop the carrot in thermy first and then put in the cake. Don't like the idea of exerting myself by using a grater.

    I spooned my mixture into 24 patty cake cases and baked for 15-20mins at 175 degrees - Make sure you keep an eye on them though...They burn easily!
