Nutella Stuffed Choc Chip Cookies

  • 12 tablespoons Nutella
  • 250 g unsalted butter
  • 240 g brown sugar
  • 140 g white sugar
  • 2 eggs
  • 1 teaspoon Vanilla Paste
  • 450 g plain flour
  • 2 teaspoons cornflour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt

Recipe's preparation

    Nutella
  1. Line a baking tray with baking paper and drop Nutella in 1 tablespoon portions, you will need 12 in total.
  2. Put into the freezer to harden up while you carry on with the rest of your recipe.
  3. Browning butter
  4. Add butter to mixing bowl
  5. Melt 5 min/70 deg/speed 2
  6. Once butter is melted, continue to brown the butter 10 min/90 deg/speed 2
  7. Set aside to cool. Clean and dry mixing bowl.

    ** If you have a second bowl, allow butter to cool in bowl and carry on with recipe using your second bowl.
  8. Preheat oven to 190 degrees
  9. Line 2 x baking trays with baking paper or thermomats
  10. Dry Ingredients
  11. Add flour, corn flour, baking powder, bicarb soda and salt to mixing bowl.
  12. Combine 10 sec/speed 5
  13. Transfer to bowl and set aside
  14. Combining Ingredients
  15. Add browned butter, brown sugar and white sugar to bowl.
  16. Combine 20 sec/speed 3
  17. Scrape down sides of mixing bowl
  18. Combin 10 sec/speed 3
  19. Add egg & vanilla to mixing bowl, combine 20 sec/speed 4
  20. Add pre combined dry ingredients to mixing bowl. Combine 15 sec/speed 5
  21. Scrape down sides of mixing bowl
  22. Combine 10 sec/speed 5
  23. Add choc chips to mixing bowl & combine with aid of spatula 30sec/reverse/speed 5
  24. Assembly
  25. Turn dough out onto Thermomat or bench & divide into 12 equal portions
  26. Get Nutella from freezer, you'll need to work quickly as the Nutella will begin to melt very quickly
  27. With slightly damp hands press cookie dough into your palm and then press one piece of Nutella into the centre and wrap the cookie dough around the Nutella, ensuring the Nutella is completely covered in cookie dough
  28. Repeat with all dough & Nutella
  29. Place cookies on baking paper/thermomats & sprinkle with extra choc chips (optional)
  30. Bake for 12-13 minutes
  31. Allow to cool & enjoy!
