Oatey Fruit Cookies

Ingredients

  • 100 g sesame seeds
  • 170 g rolled oats
  • 70 g oatmeal (see Tips to make your own oatmeal)
  • 100 g Desiccated Coconut
  • 80 g dried apricots
  • 70 g sultanas
  • 2 eggs*
  • 70 g almond oil
  • 100 g honey*

Recipe's preparation

  1. Pre-heat oven to 180°C.

  2. Place sesame seeds into mixing bowl and toast 2 min/100ºC/speed 1. Set aside.

  3. Place apricots into mixing bowl and chop 7 sec/speed 7.

  4. Add remaining ingredients and knead 1½ min/Closed lid/Dough mode.

  5. By hand, pick up a small amount of mixture (about the size of a golf ball), form into a ball, place on cookie tray and press into shape. Use wet hands for easier handling of mixture.

     

  6. Bake for 15-20 minutes or until lightly golden.

  7. Allow to cool before removing from baking tray.

Tip

A delicious and sustaining cookie for morning or afternoon tea – far better than any commercial ‘muesli’ bar!

*  Replace eggs with 2 tbsp of ‘no egg’ mixture mixed with ½ cup of water, and honey with Maple syrup for a vegan option.

 To make your own oatmeal, use oat grains and mill 1 min/speed 8.

    Great recipe. I subbed plain flour in for oatmeal because I forgot to mill it before adding in other ingredients (&we don't need gf). Added to fav's!

    I made these a couple of days ago, substituting 70 grams of whole meal plain flour for the oatmeal and rice bran oil for the almond oil. Results were delicious... Thoroughly recommend this recipe.  tmrc_emoticons.)  Cooking 7
