Oaty Ginger Crunch

  • 150 gram Butter
  • 160 gram brown sugar
  • 2 tablespoon golden syrup
  • 125 gram flour
  • 1.5 teaspoon baking powder
  • 1.5 teaspoon ground ginger powder
  • 160 gram rolled oats
  • 75 gram dessicated coconut
  • 125 gram Butter
  • 5 teaspoon ground ginger powder
  • 3 tablespoon golden syrup

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

    Base
  1. Set oven to 180°C.
  2. Line a 22cm x 22cm tin.
  3. Weigh in Butter, Brown Sugar Mix 15 seconds, speed 5.5.
  4. Add Golden Syrup, Flour, Baking Powder, Ginger, Rolled Oats and Coconut into mixing bowl.
  5. Mix 5 seconds, speed 5. Scrape down sides of bowl. Mix 5 seconds speed 5.
  6. Press into tin and bake for 20mins or until lightly golden.
  7. Icing
  8. While base is cooking,
    Add Butter, Ginger, Golden Syrup into mixing bowl. Melt together for 2 minutes, 80 degrees, speed 3.
  9. Add Icing Sugar into the mixing bowl. Mix for 10 seconds, speed 5. Scrape down sides and repeat.
  10. Pour over warm slice.

    Cool in tin and cut into pieces.

Tip

If you love ginger, add another half a teaspoon to the base. You ca also easily double this recipe, just make sure you cook it for longer - make sure the base has started to brown before removing from the oven.
