Paleo Banana Nut Muffins

Ingredients

  • 250 g bananas, approx 4
  • 4 eggs
  • 120 g almond butter
  • 25 g coconut oil, melted
  • 1 tsp vanilla
  • 50 g Coconut Flour
  • 2 tsp cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • chopped almonds, cashews or walnuts, optional

Recipe's preparation

    Method
  1. Pre-heat oven to 180 degrees. Line muffin tray with muffin cases.

  2. Place bananas, eggs, almond butter, coconut oil and vanilla in TM bowl and combine 30 sec/sp 4. Scrape down bowl.

  3. Add coconut flour, cinnamon, nutmeg, baking powder, baking soda and salt to TM bowl and blend 30sec/sp 4.

  4. Fill muffin cases. Optional: Top with chopped nuts of choice. Bake for 20-25 mins.
