Passion Fruit Slice

Ingredients

Base

  • 125 gram Butter
  • 140 gram Self Raising Flour
  • 70 gram desicated coconut
  • 100 gram castor sugar

Filling

  • 395 gram condensed milk, 1 tin
  • 170 gram passion fruit pulp, 1 tin
  • 2 lemon juice

Recipe's preparation

    Base
  1. Preheat oven to 160 degrees celsius.

    In TM bowl melt butter 2 minutes/70 degrees/Speed 2.

    Add remaining ingredients and mix 20 sec/Speed 4 - scrape down sides if needed.

    Press into a baking tin lined with baking paper.

    Bake for 10 mins.

    Allow to cool.


  2. Filling
  3. Add all ingredients into TM bowl, mix 10 sec/Speed 4/Counter-clockwise operation.

    Pour over the cooked base.

    Bake for 10 mins

Tip

To slice - dip knife in boiling water and pat dry with a towel then slice. This will help you achieve clean cuts for better presentation.

    I didn’t read the instructions properly and added all the ingredients (for base and filling) after the butter had melted.

    Actually turned out delicious as a cake slice but needed to cook it for 30-40mins total. I’m not an icing person so liked it as is but Hubby suggested icing, lemon would be yum.

    Found that it needed more like 12 mins cooking in both steps. The lemon measurement is unclear, the juice of 2 small lemons worked well for us though.

    Very tasty, struggled to get my husband to stop eating them last night. I changed half to flour to wholemeal, 2tbsp lemon, used low gi sugar and low fat sweetened condensed milk.

    Thank you for the recipe. Very tasty, will definately make it again. I used frozen passion fruit pulp and aprox 2 tablespoons of lemon juice as not quite sure how much lemon juice to add.

I was going to make lemon Meringue for our NYE gathering but run out of time to make it & looked this recipe up 10 minutes before our guests arrived- had the base cooked by the time they got here & top was so quick & easy noone even noticed me pop into the kitchen to do it.Thanks heaps for the recipe.
