- 170 grams strained passionfruit juice
- 250 grams Butter
- 225 grams sugar
- 3 eggs
- 250 grams buttermilk
- 300 grams Self Raising Flour
- 85 grams strained passionfruit juice
- 60 grams water
- 170 grams caster sugar
- 1/3 Reserved Seeds
Turn oven to 180C
Grease and line a caked tin.
Take the pulp out of your passionfruit and place in microwave for 30 seconds until warm.
Strain the passionfruit over a jug and reserve the juice and seeds, separately.
Mill sugar on speed 9/10 seconds
Add butterfly and cream the butter and caster sugar till pale and fluffy. Speed 4/30 seconds to a minute.
While machine is still going add the eggs in one at a time.
Add flour and the combined passionfruit juice and buttermilk alternating.
Pour the mixture into a greased and lined cake tin. Bake at 180C for an hour.
Test with a skewer and if it comes out clean then it's cooked.
Stand for 5 minutes before turning bottom up onto a wire rack.
Then pour over syrup.
To make the syrup combine the passionfruit juice, water and caster sugar as well a 1/3 of the passionfruit seeds into your Thermomix.
Cook 10 minutes/90C/"Counter-clockwise operation" /"Gentle stir setting" .
Once the cake is cooked and still hot pour over the hot syrup and you're done.
You will need about 12 passionfruit for this cake
Place cake rack over a large plate to catch any syrup that drips off
