Peanut Butter & Chocolate Oat Biscuits

Peanut Butter & Chocolate Oat Biscuits

  • 100 g coconut oil
  • 130 g crunchy peanut butter
  • 110 g Coconut sugar
  • 2 tsp Vanilla bean paste or extract
  • 1 egg
  • 150 g plain flour
  • 1 tsp baking powder
  • 1 Pinch salt
  • 180 g rolled oats
  • 85 g Chocolate nibs

Recipe's preparation

  1. Preheat oven to 180 degrees and line 3 baking trays with paper.

    Place Oil, Peanut Butter, Sugar & Vanilla in bowl and mix for 30 sec speed 6. Scrape down sides of bowl, then mix again for about 10 sec on speed 3 whilst dropping egg in with blades moving.

     

  2. Add flour, baking powder & salt. Mix 40 sec speed 4.

     

  3. Add in oats & chocolate chips and mix for 10 sec, Counter-clockwise operation, speed 4. Scrape down sides and again mix for 10 sec, Counter-clockwise operation, speed 4.

     

  4. Roll mixture into balls about 1 tbsp in size. Slightly squeeze to force mixture to bind. Place on baking tray lined with baking paper and slightly flatten with a fork. Place biscuits about 2cm apart.

     

  5. Bake for 12-15mins at 180 degress or until pale golden in colour. Cool on wire rack.

Tip

Note - mixture will be similar consistency to Anzac Biscuits

You can substitute with brown sugar & butter if you do not have/like coconut products
