Pear Tart Fresh and Light (Donna Hay)

Ingredients

Pear Tart

  • 115 gram Whole Wheat Plain Flour
  • 40 gram almond meal
  • 1 1/2 teaspoons baking powder
  • 80 gram Maple syrup
  • 1 egg
  • 180 gram buttermilk
  • 2 teaspoons lemon rind, (grated)
  • 1/2 teaspoon cinnamon
  • 40 gram unsalted butter, (melted)
  • 2 Pears Brown Firm, (cored and sliced)
  • 2 tablespoon raw sugar

Recipe's preparation

    Pear Tart
  1. Preheat oven to 190 degrees.  Place the flour, almond meal and baking powder in TM bowl and mix 10 seconds on speed 5.  Set aside.

  2. Peel 4 rinds off the lemon (you can vary this depending on how lemony you want the tart to taste) and grind for 20 seconds on speed 10.  Add the maple syrup, egg, buttermilk, and cinnamon and mix for 10 seconds on speed 5.

  3. Add the melted butter and dry ingredients to the buttermilk mixture and mix for 20 seconds on speed 5.

  4. Line the base of a 24cm loose bottomed tart tin with non stick baking paper.  Pour the mixutre into the tin.  Arrange the sliced pears over the top and sprinkle with the Raw Sugar.

  5. Bake for 35-40 minutes or until the tart is cooked and tested with the skewer. 

    Can be served with sprinkled icing sugar over the top or ice cream or whipped cream.  Or for  a healther option a whipped vanilla ricotta (ricotta whipped with maple syrup and vanilla essence).

Tip

I didn't have buttermilk on hand so I made my own.  1 tablespoon of vinegar to one cup of milk (I used skim milk to be healther) and let it sit for 5 minutes.
