Pecan and pepita crumble cupcakes

  • 60 g pecans
  • 40 g pepitas
  • 20 g Shredded coconut
  • 60 g brown sugar
  • 125 g Butter, softened
  • 1 teaspoon vanilla essence
  • 170 g caster sugar
  • 2 eggs
  • 270 g Self Raising Flour
  • 170g g Milk

Recipe's preparation

    Method
  1. Preheat oven to 180C. Line a 12-hole muffin pan with paper cases.

    Place pecans into mixing bowl and chop 5 sec/speed 4. Place pecans into a seperate bowl and stir in pepitas, coconut and brown sugar. Set aside.

    Place butter, vanilla and caster sugar into mixing bowl and mix 40 sec/ speed 3.

    Add eggs, flour and milk and mix 20sec/speed 3.

    Divide half of the cake mixture among muffin pan. Sprinkle over half of the crumble.

    Divide remaining cake mixture among muffin pan and sprinkle with remaining crumble on top.

    Bake 20-25 minutes or until an inserted skewer comes out clean. Leave in the pan 5 minutes before transferring to a wire rack to cool.
