Pecan-Topped Pumpkin & Chia Muffins

  • 100 grams pecan nuts
  • 550 grams all-purpose flour
  • 1 tbsp baking powder
  • 2 tsp baking soda or bi carb soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground allspice
  • 1/2 tsp ground cloves
  • 400 grams raw sugar
  • 4 eggs
  • 100 grams coconut oil (liquefied)
  • 250 grams buttermilk
  • 130 grams water
  • 425 grams pumpkin puree (cooked)
  • 1-2 tbsp chia seeds

Recipe's preparation

  1. 1. Preheat oven to 175 deg C.

    2. Add pecans into TM bowl and roughly chop with Turbo 1 second 1-3 times. Remove from TM bowl and set aside.

    3. Add dry ingredients except sugar to the TM bowl. Mix for 10 seconds on speed 5. Remove from TM bowl and set aside.

    4. Add sugar, eggs, oil, and buttermilk to the TM bowl. Mix for 3 seconds on speed 7.

    5. Add water, pumpkin, and chia seeds. Mix for 5 seconds on speed 3.

    6. Add flour mixture to the TM bowl.  Mix for 5 - 10 seconds on speed 4 until combined.


Accessories you need



Spices can be doubled for more intense flavor.

Sugar can be reduced to 200 g.

Recipe will reach the 2L capacity of the TM bowl so take care when adding and mixing the dry ingredients.

This recipe makes a large number of muffins depending on the size of muffin you like.  As shown in the picture, the recipe will create 12 regular sized muffins, 18 mini-muffins, and 1 loaf.  Alternately, you can create 2 full size loaves.  Baking time for a loaf is approximately 50 minutes.  You may need to cover the loaves with aluminum foil for the last 10 minutes to prevent overbrowning.

Omit the nuts for a nut-free treat in school lunchboxes.  You can also substitute chopped walnuts.

Extra loaf/muffins can be frozen when wrapped tightly in plastic wrap, for up to one month.
