PINEAPPLE BOILED FRUIT CAKE VARIATION

  • 1 x440 g tin crushed pineapple
  • 500 gmixed fruit
  • 120 g Butter
  • 150 g Muscovada Sugar
  • 1 tsp mixed spice
  • 1 tsp bicarb soda
  • 140 g plain flour
  • 140 gself raising flour

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    PINEAPPLE BOILED FRUIT CAKE VARIATION
  1. 1. Preheat oven to 150°C.

    2.Place pineapple, Mixed Dried Fruit, butter, muscovada sugar, mixed spice and bicarb soda into TM bowl and cook for 10 minutes at 100°C, Counter-clockwise operation on speed 1.

    3.Allow to cool.


    4.Add remaining ingredients and combine for 10 seconds on speed 4 on reverse.

    5.Pour mixture into a lined 20cm circular cake tin and bake for 1.5hours at 150°C, then reduce to 120°C for 30 minutes.

    6. Insert skewer into middle of cake to check if cooked. Turn out onto a cake rack to cool.

    7. Enjoy.

Tip

Cake should be moist – cooking time or temp may need to be reduced if browns too quickly
