  • 440 g Pineapple crushed, in juice
  • 500 g mixed dried fruit
  • 1 teaspoon vanilla extract
  • 1 cup --- raw sugar
  • 125 g Butter
  • 2 eggs, lightly beaten
  • 1 cup plain flour
  • 1 cup Self Raising Flour
  • 1 teaspoon bicarbonate of soda

Recipe's preparation

  1. grease and line a deep 20cm round cake plan with baking paper. Preheat oven to 180C. 

  2. Add pineapple (including juice), dried fruit, vanilla, sugar, butter and bi carb soda to TMX bowl and cook for 10minutes/110C/reverse speed 1

  3. let mixture cool in the TMX bowl for ten minutes

  4. add eggs, then dry ingredients to the TMX bowl and combine 30 seconds/reverse/speed 2.

  5. pour cake mixture into tin and bake for 1 1/2 hours or until cooked when tested. 

  6. stand ten minutes before turning out onto wire rack to cool

    This cake is very nice. I turned my oven down to 170 and the cake was cooked in an hour. Thanks for sharing tmrc_emoticons.)
