Pistachio and Date Loaf

Ingredients

Date Mix

  • 200 g pitted dates
  • 150 g water
  • 1/4 level tbsp bicarbonate of soda

Date Loaf

  • 30 g Butter
  • 150 g brown sugar
  • 1 egg
  • 100 g gluten free flour
  • 100 g gluten free self-raising flower
  • 30 g pistachio nut
  • 30 g Almond milk

Recipe's preparation

    Method
  1. Preheat oven to 180 degrees. Grease loaf tin and set aside
  2. Place the dates into the mixing bowl speed 5 for 10 seconds to chop. Add the butter and raw sugar and mix for 10 seconds, Speed 6.
    Scrape down the sides of the bowl.
    Mix for further 5 seconds, Speed 6.
    Add the egg and mix on Speed 3 for 5 seconds.
    Add the self raising flour and plain flour and mix on Speed 7 for 5 seconds.
    Scrape down the sides of the bowl and mix for a further 5 seconds on Speed 7.
    Add 30g of pistachio's amdn mix for 5 Seconds on reverse Speed 1.5.
    Pour the batter into the prepared loaf tin and bake for approximately 50 minutes (check after 40 minutes), if the loaf is browning too much, loosely place a sheet of foil over the top and continue baking. Allow to cool for 20 minutes in the tin before turning onto a wire rack to cool completely.
