Pistachio, cardamom and lime cake

Cake

  • 150 g unsalted butter cubed, plus extra for greasing
  • 150 g Shelled unsalted pistachios
  • 1 teaspoon cardamom seeds, from about 10-15 pods
  • 185 g self-raising flour
  • 185 g caster sugar
  • 3 medium eggs
  • 125 g plain yogurt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cake
  1. Preheat the oven to 180C fan. Grease and base-line a deep, 20-22 cm round springform cake tin with baking paper.

  2. Place the cardamom seeds in the TM bowl - Turbo x4 times

     

  3. Add the pistachios and chop - 6 seconds/Speed 5 (until coarsely chopped)

  4. Add the butter, flour and sugar - 20 seconds/Speed 5 (until crumbly)

     

  5. Add the eggs and yogurt - 30 seconds/Speed 5 (ensure evenly combined with the aid of the spatula)

     

  6. Spoon the mixture evenly into the tin. Bake for 45-60 min or until a skewer inserted into the centre of the cake comes out clean.

     

  7. Cool in the tin for 10 min, then turn into a wire rack to cool slightly while you make the syrup.

  8. Lime syrup
  9. Put the zest of the lime and the sugar in the thermomix bowl - 10 seconds/Speed 10.

     

  10. Add the juice of the lime and the water, then 4 min/100C/Speed 3

     

  11. Cool slightly. Put the warm cake on a plate, pierce all over the top and spoon over the warm syrup.

Tip

Serve slices of the cake warm or at room temperature on its own or accompanied by cream or creme anglaise.
