  • 200 grams unsalted butter, Softened
  • 200 grams sugar
  • Rind of half an orange, No white pith
  • 2 teaspoons vanilla extract
  • pinch salt

Recipe's preparation

    Cake
  1. Preheat oven to 170 degrees C

    Grease and line a 1.25L loaf tin with baking paper.

    Place sugar into mixing bowl and mill 3 sec/speed 9. Set aside.

    Place orange rind in mixing bowl and grate 10-20 sec/speed 8.

    Add reserved sugar back into mixing bowl with the orange.

    Add butter and mix 40 sec/speed 5.

    Add zest, vanilla and salt and mix 10 sec/speed 4.

    With blades rotating on speed 4, add eggs one at a time through hole in mixing bowl lid.

    Add flour and mix for 20 sec/speed 5. Scrape down sides of bowl and mix for a further 10 sec/speed 5.

    Spoon batter into loaf tin and bake for 1 hour 10 minutes, or until golden and a skewer comes out clean. Cool in tin.

The cake is quite sweet, it tastes great served with ice cream and even some berries or poached fruit over the top of each slice.

    I made this recipe to use in a raspberry cheesecake trifle. The orange and raspberry together was great, BUT this recipe did not work for me with plain flour. I ended up with a solid, doughy block.

    Not a bad cake, very easy to make. Needed a little less time in the over (approx 10 mins less). I used Le,on rind rather than orange.
