  • 900 g quince
  • 100 g water
  • 1 teaspoon grated lemon zest
  • 1 tablespoon freshly squeezed lemon juice, Juice of one small lemon

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Quince conserve
  1. Choose 3-4 good size quince, remove bloom and wash. Place in slow cooker for 10 hours on low.
    Allow to cool, skin, and core, but into 3cm chunks..skin will just slip off, flesh is easy to cut.
  2. Weigh 900g of prepared quince into Thermomix
  3. Add water, sugar, lemon juice and zest
  4. Cook for 60 minutes, speed 2, reverse blade, at 105 degrees. Remove measuring cup and place simmering basket on top of lid, to prevent spitting.Counter-clockwise operation
  5. Check that conserve sets, by placing a teaspoonful on a small plate that has been chilled in the freezer. If conserve is not setting, allow more cooking time.
  6. Pour into sterilised jars, seal.

Tip

The time in the slow cooker, allows the flesh to soften, and the skin will just slip off.

The conserve should be a deep ruby red when it's done.

Conserve is lovely added to shortcrust pastry tarts, with meringue topping.
if conserve is too chunky, chop for 2 seconds speed 4.. repeat until conserve is at your preferred consistency
