  • 95 grams raw sugar
  • 160 grams brown sugar
  • 250 grams Butter, room temp
  • 3 teaspoons vanilla extract
  • 2 egg
  • 430 grams plain flour
  • 1 teaspoon baking powder
  • 340 grams Chocolate Freckles

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees and line 2 baking trays with baking paper.

    Mill raw sugar 2 seconds, speed 9.

  2. Add brown sugar, butter & vanilla. Mix 30 seconds, speed 6 until light and fluffy.

  3. Add eggs 1 at a time. 1st egg - 10 seconds, speed 5. 2nd egg - 10 seconds, speed 5.

  4. Add flour and baking powder. Mix 30 seconds, speed 6.  Use spatula through the hole in the lid to help stir the mixture if needed.

  5. Knead for 30 seconds, Closed lid, Dough mode

  6. Place SMALL balls of dough onto prepared trays - leaving room for spreading. Balls only need to be just a tiny bit bigger than the size of a freckle.

  7. Press 1 freckle onto the top of each cookie.

  8. Bake for 12-15 minutes or until light golden.  Cool on trays for 5 mins, then transfer to a wire rack to cool completely.

Tip

This recipe should make approx 70 cookies.  Keep your dough balls small!  Also you may like to purchase a larger packet of freckles as I always run out when I buy the small packet... probably due to me eating too many in the process!

Suitable for TM31 also.  Instructions are exactly the same.

    I don't think this recipe would be suitable to roll. You could choc dip after cooking!

    These were great, made a really large amount... although they still didn't last long ! As a side note the freckles these days are expensive at almost $6 a packet, but IGA stores sell Homebrand ones less than half the price  Big Smile

    They are baking at the moment and I can't wait to try them. I made nearly 50, so I need to make them a bit smaller next time, but I wouldn't have had enough freckles so thats not so bad. The mixture tastes pretty yummy.....

    Amazing!!

    These are a massive hit in our house - perfect buttery texture, not too sweet. Fast to make and the kids love helping roll them then "plopping" the freckles on top.

    I only bought a small bag of freckles so made them a bit bigger, got 45 with freckles and another 8 that I cooked plain. Have split them up and frozen half so they dont all get eaten at the one time! Will be making these again Big Smile

    Great recipe, very easy & quick to make, have made a few times now, loved by little & big kids.

    Awesome for morning or afternoon tea. Taste yummy dunked into glass of cold milk, like my kids do.

    Great to take as a gift on a nice plate, when invited to peoples homes. They look good too.

    I got about 80-90 cookies from recipe & needed a large pack of freckles. Give them a go.
