Ingredients
Rhubarb Cake
- 300 g brown sugar
- 60 g Butter
- 2 eggs
- 500 g fresh rhubarb, Chopped
- 300 g sour cream
- 1 teaspoons cinnamon
- 1 teaspoons Bi-carb soda
- 285 g plain flour
- Topping
- 1 level teaspoons cinnamon
- 80 g brown sugar

Recipe's preparation
- Beat brown sugar and butter 30 seconds speed 4.
Clean mixture away from blades and add butterfly.
Add eggs and beat until well mixed.
Remove butterfly.
Add rhubarb, sour cream, cinnamon, bi-carb and plain flour. Mix 20 seconds, reverse speed 4.
Remove lid and mix with spatula by hand until combined.
Pour into 22cm cake tin, sprinkle with topping of 80g brown sugar and cinnamon.
