Rocky Road Brownie

Ingredients

  • 120 g Butter
  • 300 g choc chips
  • 110 g raw sugar
  • 100 g brown sugar
  • 1/2 tsp salt
  • 2 eggs, large
  • 188 g self-raising flour
  • 250 g mini marshmallows
  • 125 g chopped macadamia nuts, can be omitted for a nut free version

Recipe's preparation

  1. Preheat oven at 170 deg C, fan forced.

    Line a baking tray, approx. 25cm x 18cm.

    Place roughly chopped butter & 220g choc chips in TM bowl and mix sp. 6 for 10 sec.

    Melt on sp. 4, 37 deg C, 5 mins.

    Add sugars, salt, eggs and flour.  Mix sp. 6, 10 secs.  Check and scrape down sides if required and mix for further 3 secs, sp.6 (only if needed).

    Bake for 30 mins.

    Remove from oven and sprinkly remaining 80g choc chips and all of the marshmallows and nuts (omit if making nut free).  Put back in the oven for 5 mins so that the topping melts over the brownie.  Then leave to cool & enjoy.
