Royal Mincemeat cake

  • 150 grams Butter, softened in TM
  • 150 grams caster sugar
  • 225 grams Self Raising Flour
  • 2 eggs
  • 75 grams Glacé ginger, chopped
  • 75 grams dried cranberries
  • 450 grams jar Robertsons Fruit Mince
  • 2 level tablespoons flaked almonds

Recipe's preparation

    Royal Mincemeat cake
  1. Weigh all ingredients except flaked almonds into TM bowl.

    Mix together at10secs at speed 7 on reverse.Counter-clockwise operation[

    Scrape down using spatula and mix again for 5 secs on speed 7 reverse

    Bake in a greased and lined 20 cm cake tin for approx 1 hour

Tip

After 60 minutes in the oven test the cake with a skewer for readiness.  If the cake is becoming too dark, cover the top with folded baking paper until baking is finished.
