Rustic Chocolate Plum Cake

Cakes

  • 150 grams Coconut sugar
  • peeled rind of 1 lemon
  • 6 plums, halved and stoned
  • 140 grams whole almonds, (plus 12 extra for topping)
  • 100 grams dark chocolate
  • 120 grams Butter, unsalted
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp Vanilla Bean Paste

Recipe's preparation

    Cakes
  1. Pre-heat oven to 170 degrees celcius (fan-forced) and line a 12-hole muffin pan with patty pans.


     

  2. Place only 80 g of the sugar with the lemon peel and mill 10 sec/speed 9.  Spoon rough teaspoon sized amounts into each patty pan.  

  3. Press one almond (from the 12 extra set aside) into the 'gap' left from the plum stone in each plum half.  Then place each plum half carefully almond side-down into the patty pans on top of the sugar mixture.

  4. Place the almonds in mixing bowl and mill 10 sec/speed 8.  Set aside

  5. Place chocolate (broken into pieces) into mixing bowl and chop 5 sec/speed 6.  Set aside

  6. Place remaining sugar and butter into mixing bowl and mix 10 secs/speed 7.  Add eggs, baking powder and vanilla to mixing bowl mix 20 secs/speed 7.  Add almonds and chocolate and mix 30 sec/counter-clockwise operation/speed 4.

  7. Spoon carefully into the 12 patty pans over the plum and bake for 20 minutes.  Remove and allow to sit for 10 minutes if serving warm.  Place cake upside-down on serving plate and gently remove patty pan.  Serve with thick cream or icecream.

Tip

If you don't have coconut sugar, you could use brown sugar, rapadura or even raw sugar instead.
