Santiago Almond Cake

Santiago Almond Cake

  • 250 grams blanched almonds
  • 250 grams sugar raw
  • 4 eggs
  • Lemon peel of one oragnic lemon

Recipe's preparation

    Cake
  1. 1. Preheat oven to 180 C

    2. Place almonds into mixing bowl, chop 15 sec/speed 5. Transfer into  bowl and set aside

    3. For icing sugar, place sugar into mixing bowl, pulvarize 15 sec/speed 10. Transfer 3 tbsp into a bowl and set aside

    4. Add lemon peel, pulvarize 15 sec/speed 10

    5. Add eggs and mix 2 min/speed 4

    6. Add almonds and mix 5 sec/speed 3

    7. Pour mixture into a buttered spring form tin (20-24cm) and bake ina preheated oven 180 C for 25-30 minutes

    8. Allow to cool in the spring form tin to room temperature before transferring to a serving plate

    9. Dust the top with 3 tbsp of icing sugar

    Anita Teesdale:I think you made the mistake I almost made.Did you remove the sugar from the bowl before adding the lemon peel? You add the lemon peel to the icing sugar.
