- 130 grams pitted dates
- 20 grams Butter
- 250 grams Boiling water
- 1 tsp bi-carb
- 70 grams sugar, I used Rapadura
- 230 grams Self Raising Flour
Recipe's preparation
Preheat oven to 180*C
Place dates in TM Bowl and Chop 3 seconds / speed 7
Add Butter, Boiling Water, Bi-Carb and Sugar and Mix 1 minutes / "Counter-clockwise operation" / 100* / speed 1
Scrape down sides of bowl
Add the Flour and mix 15 seconds / "Counter-clockwise operation" / Speed 3
Fill 9 mini loaf pans and bake in preheated oven for approx 20 mins

Tip
If you don't want to bake mini loaves simply put mixture into a loaf pan and bake for approx 45 minutes.
I like to make mini ones, wrap in glad wrap and store in the freezer. They are great to pull out in the morning to put in lunchboxes or if an impromtu guest pops over for a cuppa as they defrost quite quickly.
