Simple yoghurt & lemon cake

  • 270 g yoghurt, plain
  • 3 eggs
  • 220 g caster sugar
  • 2 lemons, zest and juice
  • 100 g vegetable oil
  • 100 g self-raising flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Easy Thermie method
  1. Place all cake ingredients (except lemon juice & SR Flour) into thermie. Whisk for 30 seconds on speed 4.
    Scrape down sides.
    Add SR Flour and fold into mix 10 seconds speed 2.
    Pour into lined and floured 22cm round cake pan.
    Cook in oven 165 degrees for 50 to 55 mins.
    Cool in tin 5 mins then turn out to rack to cool completely.
    Make icing and ice cake when cool.
    Yum!
