Soft Chocolate Chip Sprinkle Cookies

  • 165 grams unsalted butter
  • 50 grams white sugar
  • 170 grams brown sugar
  • 2 eggs, large
  • 1 tsp Vanilla Extract or Paste - Measured with love!
  • 1.5 tsp baking powder
  • 1/2 tsp salt
  • 100 grams packet of vanilla dessert mix
  • 350 grams plain flour
  • 1/4 cup of rainbow sprinkles
  • 1/4 cup of 100's and 1000's
  • 250 grams chocolate chips, (I use milk and dark)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180C and line a tray with baking paper.

    Add 165gm butter (I use unsalted, but if you have no choice but to use salted, then omit the salt in step 6), 50gm White Sugar and 170gm Brown Sugar.

    Mix 1 min/speed 4 MC on.

    Scrape down sides.

    Add 2 large eggs, 1 tsp vanilla, 1.5 tsp baking powder, 1/2 tsp salt.

    Mix 30 sec/speed 3.

    Add 100gm pkt Vanilla dessert mix and 350gm Plain Flour.

    Mix 1 min 30 sec/speed 4 MC on.

    Add 1/4 cup of sprinkles, 1/4
    cup of 100's and 1000's and 250gm Chocolate Chips.

    Mix 1 min/reverse/speed 1 MC OFF - Use spatula through top of lid to help mix.

    Use a cookie scoop and place cookie dough onto tray, each scoop being 3-5cm apart. If you don't have a cookie scoop, a heaped dessert spoon should do. Press down slightly with fork or spoon.

    Bake for approx 10 mins. Enjoy!

Tip

If you find that the sprinkles and chocolate chips havent mixed through well, empty into a bowl and mix there instead. This will ensure that the TM bowl wont get hot and melt your mix.

I’ve used both cottees and aeroplane brands of dessert mixes which are both found with the jelly and icecream toppings in your local supermarket
