Spiced Chocolate Zucchini Cake

Ingredients

10 slice(s)

Cake

  • 350 g zucchini medium, cut into rough chunks
  • 180 g sugar
  • 115 g Butter Cubed
  • 1 level teaspoon vanilla essence
  • 2 tablespoons espresso coffee (or substitute for milk)
  • 3 --- free range eggs
  • 240 g plain flour
  • 60 g cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 100 g choc chips
  • 1 teaspoon mixed spice

Recipe's preparation

    zucchini
  1. Chop Zucchini on speed 5 for 5-8 seconds. Remove and set aside

  2. Add sugar, butter, vanilla and coffee (or milk) to thermomix bowl. Speed 7 for 20 seconds. Scrape down sides and add eggs. Mix for a further 10 seconds Speed 7.

    Add dry/powdered ingredients and mix Speed 7 for 10 seconds.

    Add zucchini and choc chips and incorporate Counter-clockwise operation for 5 seconds Speed 5.

    Place into lined and greased cake tin. And bake in pre-heated oven 180deg for 50 minutes. Or until springy to touch.

    This is a great cake. Its a good way to use up the excess Zucchinis from the garden. Also great as cupcakes for school lunch boxes.

    I dont remeove Zucchini in step 1. I just leave in the bowl while I go ahead with the other steps. And I dont add coffee.

    Great birthday cake! 

    I blitz the zucchini twice and leave in bowl like others do.  I omit the coffee and use milk.  I made this for a 9 year old birthday cake and everyone raved about it.  This is one of my "go to" cakes.  Love it.

    Brilliant moist cake - made it for my son's birthday cake - disco cake.  Hidden goodness in every bite!  I used a teaspoon of cinnamon instead of mixed spice and works a treat.  Definitely going on the favourite list - even the most fussiest of eaters thought it was awesome.  Thanks for this easy no fuss cake.

    This cake is awesome, super easy to make and looks and tastes great. I didn't take the zucchini out after step 1 either and the kids had absolutely no idea that there was any in it. After school holidays I'll be making it again and baking it in cupcake size so the kids can take it to school (they requested it tmrc_emoticons.D)

    Ok , so it turns out , I missed the " remove and set aside " bit on the first part of the instruction ! So I happily chopped away my  zucchinies and left them in the thermomix jug . It turned out to be a bonus though because there was absolutely no sign of anything" green " in the finished product I also omitted the spice and didn't replace i with anything t  ! I  would do it exactly the same next time !  I sprinkled mini m& m on top of the batter before for putting it in the oven . Thanks for the recepie x 

    Dear Lord,  So far today,  I haven't gossiped, lost my temper, been grumpy, nasty or selfish. I haven't whinged or eaten any chocolate! However,I'm going to get out of bed in a few minutes & I'll need a lot more help after that! Amen

    Fantastic, zucchinis were cheap last week so I bought 3kgs, then had to go looking for recipes to use them up tmrc_emoticons.) This fit the bill perfectly, all 5 of my kids scoffed theirs down as did hubby and there's still the other 1/2 for dessert tomorrow night, only cause i wouldn't let the kids eat the entire cake in one sitting lol. They were a bit impressed that they got extra serves of vegies without knowing.  I'm going to make it again tomorrow (still got loads of zucchinis) and do it in muffin tins for school.

    I use a 23cm round tin. I'm sure you could use a square tin or even muffin tins and just adjust the oven time. first check with a skewer to see if the cake is cooked before removing from the oven.

    You can swap the coffee for milk for children or leave it out all together. The Zucchini makes it a very moist cake.
