  • 1/2 cup EDC Strawberry Jam, i made one from chip
  • 240g whole milk
  • 15g dried yeast
  • 135g raw sugar
  • 115g soft butter
  • 2lg eggs
  • 1/2tsp salt
  • 560g bakers flour
  • 1 cup strawberries sliced thinly

  • 30g lemon juice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    dough
  1. add milk to jug warm for 10mins/37/speed 1

    add yeast and sugar and mix 5secs speed 2

    leave to stand for 10mins

    then add flour/butter/salt/2 eggs/and mix 5min/interval speed till soft dough forms to remove dough
    I turn jug upside down onto mat and release blade as dough is very soft.

    its a very sticky dough I use a little flour to shape into ball, i put in to greased bowl covered with glad wrap and left over night as weather cold but needs 2hours to double in size if you want to make straight away just wrap in mat.

    then knock down and roll dough into a rectangle approximately to size of mat


    set oven to 200

    spread jam on dough and i put about cup sliced strawberries,roll tightly and cut into 12 even pieces,i used sharp serrated knife don't cut on your mat its messy job

    i lined a round quiche dish with baking paper then i arranged the scrolls see picture or you can put in muffin tin.leave to double again then cook for 15mins then put some foil on top to stop it burning and cook for further 10mins

    while its still warm drizzle with icing tmrc_emoticons.) try stop at eating one tmrc_emoticons.)
  2. beat icing sugar and lemon juice for 30secs/speed5 till smooth

    Like some other comments, I wasn't sure that these were going to work when I took out the dough and saw how sticky it was, but they were beautiful! I reduced the sugar to 100 grms, and they were still plenty sweet enough.

    Great recipe. It was a very hot and humid day and I left my dough to rise on the bench in a bowl and it almost overflowed in a couple of hours. It was quite difficult to roll, probably due to the large amount of strawberries I had so it didn't look amazing, but boy did it taste amazing!!! I love the tartness of the strawberries once cooked. It didn't make it sickly sweet like some scrolls. I also left out the icing and it didn't feel like it was missing anything. Thank you for sharing your recipe!

    Absolutely unbelievable! So delicious! I wouldn´ t have expected the dough to work, because it really was extremely sticky. I followed your instructions last night, and this morning the dough had risen to at least double. 

    I used blitzed frozen rasberries and less sugar. It tastes awesome. Thanks for sharing the recipe!
