Streusal Topping

  • 100 g icing sugar
  • 75 g self-raising flour
  • 50 g Butter

Muffin Mix

  • 115 g Butter
  • 175 g self-raising flour
  • 1 tsp baking powder
  • 115 g caster sugar
  • 200 g buttermilk
  • 1 egg
  • 100 g berries, fresh or frozen

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Streusal Topping
  1. 1. Add icing sugar, flour and butter into mixing bowl and combine 15 sec/speed 5 or until the consistency of fine crumbs.
    2. Transfer into a bowl and set aside.
  2. Muffin Mix
  3. 3. Preheat oven to 180degC. Grease a 24 hole mini muffin pan and set aside.
    4. Place butter into mixing bowl and heat 2 min/80degC/speed 2.
    5. Add self-raising flour, baking powder, caster sugar, buttermilk and egg. Mix 30 sec/speed 5. Scrape down sides of mixing bowl with spatula and mix10 sec/ Counter-clockwise operation /speed 3.
    6. Spoon muffin batter into prepared pans 1/2 full. Add berries by pressing gently into the mixture. Generously sprinkle the streusal topping on top.
    7. Bake for 15-20 mins until the muffins are well risen, cracked on the top and golden brown.
    8. Allow to cool slightly in the pan and then loosen gently with spoon. Serve warm or cold. Enjoy!

Tip

Any leftover Streusal Topping can be refrigerated/frozen for use at a later date.
Variations:

Apple - core only & chop with the skin on for 3 sec/speed 3 before making muffin mixture and set aside. Add to the muffin mixture. Additional chopped apple can be used for the top. Add cinnamon to the streusal topping.
Banana - mash and add to muffin mixture. Additional slices, cut into halves can be used for the top of the muffins.

    These muffins are so delicious. Quick and easy to make, they make a wonderful dessert with cream or ice cream or a tasty lunchbox snack. I substituted buttermilk with normal milk with a little splash of white vinegar. Thanks for sharing this recipe.
